Although I really enjoy Skyrim, I simply can't wait until the modding community has had its hands on it for a couple of months. Hopefully Bethesda will also do their part, mainly by upgrading the UI to something that is not a big joke.
Meanwhile, here are some tips for you if you want to tweak up Skyrim. Most of these require the console, which you bring up with the tilde key (~).
Disabling auto health regen
I personally think automatically regenerating health is a joke, particularly in a game where there are ample options for healing yourself. This is the first ES game that has it. Booo!
Type [player.modav healrate -0.7] in the console, then save your game. It will disable auto health regen for that particular character.
Changing FOV
Type FOV XX in console. Default is 70, I think. 85-90 works nicely for me, it depends on your resolution and if you play first or third person mainly. You have to do this each time you play.
You can also add [fdefaultfov=XX] to skyrim.ini (users - my documents - my games - skyrim), but appearently if you fast travel that resets it and you have to type it into console again.
Difficulty
Not really a tweak but a reminder that you can up the difficulty of the game in the settings menu (under gameplay). It is set quite low at the start. I've maxed mine but I guess it depends on how you enjoy playing the game. At max, giants oneshot you at low levels and dragons are insanely difficult opponents to take on by yourself... which is how it should be if you ask me!

http://enbdev.com/download_en.htm - ENDBseries patch that RK linked me originally. This fixed my Audio static issue. For those of you that like your windows audio at 96khz+, this will allow you to do that and play skyrim without audio going wonky. It has some other fixes too, btu the Audio was what I got it for.

Yeh forgot about that. That thing is pretty awesome, upped performance for me significantly. Just remember to make backups of any files you replace.

Not sure what level I am atm. Not had chance to play for like 4 days now. I was only something around lvl 20.

My main is level 11 now, been playing way too many different chars. I've settled on one now though.
